I grew up in Tucson, Arizona, where the heat teaches you patience, and the food, if you’re paying attention, teaches you everything else. And I’ve spent most of those years with a knife in one hand and a cast iron pan in the other.
My first memory in a kitchen wasn’t glamorous. I was nine, elbow-deep in masa, trying to help my grandma make tamales for Christmas. I got it all wrong too much lard, not enough salt but she smiled like I’d handed her gold. That was the first time I felt it: food isn’t just fuel. It’s story. It’s memory. It’s glue.
I didn’t go to culinary school right away. I took the long way ‘round. I worked in a smoky roadside barbecue shack outside Flagstaff, washed dishes at a hotel buffet, then pulled a double shift at a tapas bar in Phoenix where the head chef once threw a plate (not at me, thankfully). Eventually, I landed a spot at a tiny, fiercely creative spot in Sedona where the food was art, and the rules were few. That’s where I really learned to cook not just follow recipes, but to listen to ingredients, to improvise, to fail spectacularly and still find flavor in the ashes.
Now, I split my time between running a seasonal supper club out of my backyard and consulting for restaurants that want to lean into bold, honest flavors without losing their soul. I believe food should be simple but thoughtful, local when possible, and always made with your whole chest. Whether I’m teaching a knife skills class to teenagers or geeking out with a seasoned chef over the chemistry of fermentation, I keep coming back to the same idea: cooking is connection. To the land, to your culture, to the people you love or maybe the people you’re still learning to love.
My style? A desert-born blend of smoke, spice, and comfort. I use chiltepin like some folks use salt, and I’ll fight for the beauty of a charred pepper. But I also adore Japanese pickling techniques, rustic French sauces, and the calm beauty of a perfect soft-boiled egg. I’m always experimenting sometimes it works, sometimes the compost pile wins. But that’s half the joy.
